About This Wine
From the cool-climate Eden Valley, In The Flowers is a refined, long-lived Riesling showcasing both purity and texture. Fermented in neutral French barriques with the pressings kept separate, fermentation was stopped when the residual sugar perfectly balanced the naturally high acidity from the long, cool ripening season. Bottled after 18 months of maturation on lees, the wine shows both classical fruit expression and subtle complexity from élevage.
Tasting Notes
Appearance: Pale lemon with green tinges.
Nose: Aromatic and perfumed, with vibrant floral notes, dried herbs, and fresh lime zest, layered over hints of quartz and crushed minerals.
Palate: Intense flavours of grapefruit, lemon, lime, and white pepper. Textural and finely structured, with a balance of freshness and depth. The long finish reveals subtle complexity from barrel fermentation and lees contact.
