About This Wine

In their second year working with Aligoté, the Mac Forbes team set out to explore how closely this variety mirrors Chardonnay. The fruit was crushed and destemmed into the press, soaked on skins for a couple of hours, then the juice was settled overnight before being transferred to small old oak barrels for fermentation and 8 months of maturation.

Wild yeast fermentation, sterile filtration, and bottling on 11th November 2021 complete the process. Harvested from the Koombahla vineyard in Whitfield, King Valley on 6th March 2021.

Tasting Notes

A subtle yet expressive nose with green herbs (basil), lemon, and fresh peas, layered over lees, apples, and delicate green stone fruits. The palate follows suit with blossom, green apple, and citrus, carried by a fresh, clean line of acidity.
