About This Wine

A bit of skin contact and a whole bunch of attitude — this Chardonnay was lovingly nurtured by Mitch and Phil. From twice-daily hand plunging, to late-night basket pressing, and barrelling by gravity, no two men have pursued success with such dedication since Shooter himself.

Fermented on skins for 10 days before gentle basket pressing into barrel, this wine was matured for 8 months in small old oak. Wild yeast fermentation, screen filtration, and bottled on 2nd December 2021.

Tasting Notes

Richly textural with the faint grip of skin contact, EB69 offers aromas of ripe stone fruit, citrus zest, almond skin, and gentle savoury spice. The palate is layered and precise, balancing fresh acidity with a creamy mid-palate and subtle oak influence. The finish is long, dry, and faintly nutty, with a nod to both tradition and playful experimentation.
