Tasting Notes
Pale yellow straw in colour. The nose is marked by early oak influence, gently subduing the varietal grapefruit and lemon notes. On the palate, the barrel character takes centre stage, lending aniseed, licorice and clove nuances that weave through hints of juniper, cassis, gooseberry and stone fruit. The finish is firm, dry and savoury, with impressive structure and depth. A short decant before serving will help harmonise the layers.

Whole-bunch pressed to barrel for wild fermentation.
Matured 10 months in French oak (20% new).
Oak influence deliberately emphasised for complexity and structure.
