Winemaking

• Vineyards: Eureka Vineyard (Riesling), Springhill Vineyard, Macclesfield (Sangiovese)

• Riesling: Picked early morning, destemmed, gently pressed, naturally fermented in tank, hand-bottled, not disgorged.

• Sangiovese: Picked in the morning, basket-pressed, fermented in old barrels, bottled at 0° Baume, disgorged in spring.

• Minimal intervention and no added sulphites (0/0).
