Tasting Notes
Nose: Generous and inviting aromas of lemon confit, chalk, lime zest, green apple, and shortbread.
Palate: Medium-bodied with focused acidity and a rich mouthfeel. Flavors of crème brûlée, baking spices, pink grapefruit, and river stones add complexity. A wine of power balanced by underlying freshness.
Details: Made from 100% Chardonnay grapes from the single Daosa vineyard, planted in 1996. The wine is a collaboration between the Bollinger family and Brian Croser.
Winemaking
Hand-picked grapes from the Bizot Vineyard (planted 1995-96).
Whole-bunch pressed, with primary fermentation and malolactic fermentation in old French oak barriques.
Aged 23 months in barrel, tiraged in bottle for 30 months, disgorged in August 2019 with a dosage of 7g/L.
Bright straw-green color, noted for elegance, length, and superb balance.
