Tasting Notes

Bright and clear in the glass with a vibrant raspberry-pink color reminiscent of fresh rose petals. Fine, lively bubbles create an elegant mousse. The nose is refined and mineral-driven, combining smoky limestone aromas with fresh raspberry, wild strawberry, and pomelo.

With aeration, additional aromatic layers emerge including honeysuckle, carnation, hazelnut, cherry, apricot, and sweet spice. On the palate, the Champagne is supple and fresh with a creamy, velvety effervescence. Juicy, vibrant fruit flavors are supported by beautifully integrated pomelo acidity. The finish is long and refined, marked by limestone freshness and a subtle saline note that reflects the terroir.

Vineyard & Winemaking

Saignée d’Eulalie is a rosé made using the traditional saignée method, crafted from a strict selection of Pinot Noir sourced from the estate’s oldest vines. The grapes are carefully sorted in the vineyard and again at the sorting table before destemming and maceration. The juice is then gently drawn off to preserve freshness, vibrant fruit character, and elegant color.
