Tasting Notes
Pale gold in color with straw-like reflections, reflecting the distinctive character of its maritime-influenced terroir. The nose opens with iodized and smoky limestone aromas, followed by delicate notes of violet and Kampot pepper spice. As the wine breathes, richer fruit notes emerge including cassis, cherry, pomelo, and blackberry, complemented by subtle toasty oak nuances.
The palate is rich yet fresh, with creamy texture and finely integrated bubbles. Juicy fruit flavors combine with grapefruit acidity and soft, fleshy depth. The finish is long and satisfying, marked by saline minerality and limestone-driven freshness that clearly expresses the terroir.
Vineyard & Winemaking
Noir d’Eulalie is a Blanc de Noirs made exclusively from Pinot Noir sourced from three hillside vineyard parcels. Around 40% of the wines are aged in Burgundian demi-muids (large oak barrels). Produced from massal selection vines grown on fossil-rich marl and limestone soils, this Champagne reflects both centuries of vineyard heritage and the unique character of the Côte des Bar terroir.
