Tasting Notes

Bright and clear in the glass with a deep lemon color and pale silvery reflections. Fine, lively bubbles form a persistent mousse. The nose opens with smoky limestone notes layered with lemon, fresh hazelnut, and white peach. With time in the glass, more complex aromas emerge including quince compote, cashew, butter, and almond cream, reflecting the biodynamic vineyard character.

On the palate, the Champagne is supple and fresh with a creamy, finely integrated effervescence. Juicy, crisp fruit is supported by concentrated lemon acidity, while marly limestone minerality adds salinity, texture, and a long, elegant finish. The overall impression is refined, expressive, and terroir-driven.

Vineyard & Winemaking

Blanc d’Eulalie is produced from the estate’s best Chardonnay grapes grown in the “L’Epicéa” parcel — the sunniest vineyard site on the property, planted more than 50 years ago. Approximately 40% of the wine is fermented and aged in Burgundian demi-muids (large oak barrels), and the Champagne is bottled with very low dosage to preserve purity and expression of the terroir.
