Winemaking & Style

Wendy Chardonnay is Alpha Box & Dice’s more generous and softer expression of the grape—low-fi and slightly unconventional.

  • Harvest: Machine-picked in the cool early morning using a selective harvester.

  • Pressing: Gently basket pressed to tank, cold settled overnight.

  • Fermentation: Racked to old hogsheads and a newer puncheon for wild fermentation, followed by spontaneous malolactic fermentation.

  • Aging: 10 months on lees in oak with minimal SO₂ additions.

Tasting Notes

  • Nose: Golden delicious apples, candied pineapple, brioche.

  • Palate: Soft and golden, with a lively, mouthwatering acidity.

  • Texture: Opulent, layered, and slightly creamy.
