Winemaking

Fruit was hand-picked in the cool of the morning and whole-cluster pressed.
Fermentation was split as follows:

• 85–90% in stainless steel tanks with cultured (inoculated) yeast

• 10–15% in neutral oak barriques using indigenous (wild) yeast

Once fully dry, the wine was stabilized and bottled.
